Kristian Holbrook didn't exactly go out on a limb to change some of the traditional menu items at the Green Gables Restaurant, in Jennerstown, where he was hired as executive chef three months ago. But he is hunting under trees, poking around bushes and tracking across meadows in his commitment to use as many local ingredients as possible.
